Looks like you're already doing a lot and thinking deeply about this. I do think negotiating rubrics and deadlines are a good step and you're already thinking towards making them design their own assessments. One of the problems with teaching teachers (Which I used to do) is that they might fall back on more traditional assessments, right? And I think what I found most helpful in all of this was to try to think of the most authentic assessment, the one that would be closest to what we really want our students to be able to be and do in the real world beyond our course. If we're having them make those choices, it helps to point them to that larger goal... if that makes sense? But yes, it requires some skills from both facilitator and students
